2 gal water
2 c tender quick
1 c picking or canning salt
3 - 4 oz liquid smoke
10-12 lb turkey (about 20 lbs or eight turkey hind- quarters work nicely in a water canner--all turkey can be covered by marinade.)

Soak turkey in brine for 24-48 hours. Rinse meat, rub with oil and cook covered in a 350 degree oven for 1 hour, then turn to 225 degrees until tender. The original recipe called for 1 additional hour for each pound of turkey but hind quarters are usually done in 5 to 6 hours. Meat will be remain pink when cooked but don't overcook--meat will be mushy.
