1 lb. sausage
1 medium onion chopped
3 large garlic cloves
3 ½ c. chopped tomatoes (28 oz)
½ c. chopped fresh basil
½ c. Parmesan cheese
2 tbsp. olive oil
10 oz. Ziti or spiral pasta
2½ c. cooked spinach
6 oz shredded mozzarella cheese
2/3 c. Parmesan cheese

Directions:
Directions:
Cook pasta according to package directions; drain, rinse and set aside. Heat large sauce pan over medium high heat; add sausage, onion, and garlic, cooking for about 10 minutes. Add tomatoes with liquid and basil; simmer 10 more minutes until sauce thickens slightly and tomatoes are cooked. Stir in ½ cup Parmesan cheese and 2 tbsp. olive oil, pasta, spinach and mozzarella. Transfer mixture to lightly oiled 9x13x2 pan. Sprinkle with 2/3 cup Parmesan cheese. Bake for about 30 minutes in preheated 375° oven until sauce bubbles and cheese melts.

NOTE: May substitute 3/4 tsp. garlic powder for fresh garlic. May also use ¼ cup dried basil for fresh basil.
