3 Eggs ( beaten first)
1 cup of sugar
2/3 cup pumpkin
3/4 cup flour
1 tsp baking soda
2 tsp cinnamon
8 oz cream cheese
2 tbsp butter
1 cup 10x sugar
1/2 tsp vanilla
8 oz cool whip

Directions:
Directions:
Combine eggs, sugar and pumpkin. Blend than add the flour, baking soda, cinnamon. On large cookie sheet with sides put waxed paper and grease it. Pour cake onto it. Bake @ 350 degrees for 8-12 minutes. Cake will bounce back when pushed with finger. While cake is still warm sprinkle a towel with 10 x sugar flip cake onto it. Roll it up and let is cool. Unroll and put in filling and roll back up.

Filling:
Blend 8 oz of cream cheese and 2 tbsp butter
Add 1 cup of 10x sugar, 1/2 tsp vanilla, 8 oz cool whip. Blend until smooth and creamy

Unroll cake and spread with filling. Roll up cake and refrigerate or freeze.
