1 green or red pepper, diced
2 celery stems, diced
1 t minced garlic
4 T olive oil, divided
1 lb pasta, cooked according to box directions
salt and pepper, to taste
1 T parsley
1/4 t oregano

Directions:
Directions:
Saute pepper, celery and minced garlic in 1 T olive oil until crisp tender.

Meanwhile, cook pasta according to package directions. Drain, place in large pasta bowl and toss with 3T olive oil.

When done, pour sautéed mixture over pasta. Season with salt, pepper, parsley and oregano. Serve with warm bread, if desired.

You can add vegetables of your choosing to this easy sauce, like peas, carrots, tomatoes, broccoli, etc. - whatever you like. This sauce is an alternative to tomato sauce for people who either don't like it or can't have it.
