Ingredients:  
1 medium eggplant
1 c bread crumbs
1 T chopped onions
1 t parsley
1 t oregano
soft butter
salt and pepper,to taste

Directions:
Directions:
In flat container, mix together bread crumbs, herbs, salt and pepper. Cut the unpeeled eggplant into slices 1/2" thick. Spread soft butter on both sides. Dip slices into breadcrumb mixture, coating both sides.

Place eggplant in one layer on baking sheet and bake at 450º for 10 minutes, or until browned and crisp. Then turn and bake on other side for additional 10 minutes until browned.
