Abbey's Cheesecake Recipe

1/3 c confectioners sugar
1 1/2 c graham cracker crumbs
1/4 lb butter
1 c granulated sugar
3 8 oz pkgs cream cheese
1 generous t vanilla extract
4 eggs
1 pint sour cream
1 21 oz can prepared pie filling or topping of choice

Combine graham cracker crumbs and confectioners sugar. Melt butter and add to crumb mixture. Press firmly into bottom of 8" or 9" spring form pan.

Mix together granulated sugar, cream cheese that has been softened, vanilla and eggs. Pour into spring form pan over crust.

Bake at 350 for approximately 50 minutes. Remove cheesecake from oven (do not turn off oven). Top with sour cream and return to oven for another 5 minutes.

Let cool and then top with topping of choice. Chill overnight.
