1 c sugar
1/2 t salt
3/4 c softened butter
1 egg
1 t grated lemon rind
1 t vanilla
3 c sifted flour
1 t baking powder
1 egg white, slightly beaten

Directions:
Directions:
Cream sugar, salt and butter thoroughly. Beat egg, lemon rind and vanilla into creamed mixture, until light and fluffy. Sift dry ingredients together and gradually stir into creamed mixture. Roll dough to approximately 1/8" thick on floured surface with confectioners sugar. Cut into shapes and place on ungreased cookie sheet. Brush with egg whites and sprinkle with sugar. Bake at 350º for 11 to 12 minutes or until light brown around edges. Remove to cooling rack. Store in airtight container.
