1/2 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
Dash white pepper
1 cup mashed potatoes
2 well-beaten eggs
A little scraped onion (optional)

Directions:
Directions:
Sift flour, baking powder, salt, and pepper together. Add mashed potatoes and eggs and mix thoroughly. Add a little scraped onion if desired. Drop by teaspoonfuls into deep hot fat (350º) and fry to a golden brown. Drain and serve hot.

Aunt Lillian said this recipe is good for left over mashed potatoes, but I used to make mashed potatoes just for these puffs!
