2 large cans of tomatoes
1 to 2 onions, chopped
2 cans chicken, beef or vegan broth
8 stalks celery, chopped
1 head of cabbage or cauliflower
2 cans green beans (fresh or frozen is what I use)
2 green peppers or frozen sugar snap peas
1 pound carrots
zucchini, or yellow squash can also be added

Chop veggies, add broth plus 1 can of water then tomatoes with their juice (I sometimes use seasoned tomatoes), bring to a boil, lower heat to simmer and cook until veggies are tender.

This recipe is unlimited, you can add vegetable favorites and it keeps well. I use this for my "vegan" soup at the Senior Center. People rave about it. The main ingredient is the cabbage, it is what gives lots of flavor.
