In a large pot...
2 c. potatoes, cubed
2 c. water
1/2 c. carrots, sliced
1/2 c. onion, chopped
1 tsp. salt (optional)
1/4 tsp. pepper

Bring to a boil, simmer 8-10 minutes

In another pot...
1/4 c. butter
1/2 c. flour
2 c. milk
2 c. sharp, shredded, cheddar cheese
1-16oz. can of corn (Mitchell's Shoepeg)
1 1/2 c. ham, cubed

Add this mixture to the potatoes and cook until thoroughly heated.
