2 lbs ground beef
2 large eggs
1 1/2 c. dried bread crumbs
1 1/2 c. salsa
1/2 c. minced onion
1 tsp. salt
1/2 tsp. pepper
1 can whole green chiles
1 c. shredded jack cheese
sour cream (optional)

Directions:
Directions:
Mix beef, eggs, 1/2 c. salsa bread crumbs, onion, salt and pepper. Pack 1/2 of this mixture into a loaf pan. Cut green chilies into 1/2" strips and arrange over meat and sprinkle with 1/2 of cheese. pack remaining meat mixture into pan. Bake at 400º for 55-60 minutes. Sprinkle with the rest of the cheese and let stand for 10 minutes. Serve with remaining salsa and sour cream.
