3 cups flour
3 tsp. baking powder
2 tsp. baking soda
2 1/2 tsp. ground cinnamon
1/2 tsp. salt 4 eggs
2 cups sugar
1 cup vegetable oil
15 oz. baby food carrots
1 cup chopped walnuts
1 cup raisins

Directions:
Directions:
Mix flour, baking powder, baking soda, cinnamon and salt into a large bowl. Beat eggs and sugar together in a medium-size bowl with an electric mixer until fluffy. Stir in oil and carrots. Pour into dry ingredients. Stir just until dry ingredients are moistened. ( Do not overmix.) Stir in raisins and nuts. Pour into a greased and floured 13 x 9 pan. Bake at 325º for 1 hour. When toothpick inserted in center comes out clean cake is done.

Frost with Cream Cheese Frosting.
