1/2 cup flour
1 teaspoon salt
1 teaspoon baking powder
1/8 teaspoon pepper
1 egg
1/2 cup milk
2 tablespoons melted butter
1 tablespoon grated onion
1 1/2 cups finely grated raw potatoes

Directions:
Directions:
Sift together flour, salt, baking powder, and pepper. Add egg, milk, melted butter, grated onion, and grated potato. Beat with electric mixer on slow speed just until blended.

Preheat electric skillet or griddle to 350º using small amount of fat to grease. Drop potato mixture by tablespoons into hot skillet, spreading out, and frying until crisp and brown on one side. Turn and brown on other side, 3-4 minutes. Drain on paper towels and serve at once.
