1 c sugar
2 T quick cooking tapioca
dash of salt
1 t lemon juice
4 c sliced peaches (or more if desired)
2 T butter
1 9" pastry shell, uncooked

Directions:
Directions:
Mix sugar, tapioca, salt and lemon juice. Combine with peaches and let stand for 15 minutes. Place mixture in pastry shell. Dot with butter. Cover shell with pastry strips to form criss-cross pattern. Bake in oven at 425º for 40 to 50 minutes.
