1 1/2 pounds green beans, trimmed
2 tablespoons extra virgin olive oil
1 red bell pepper, cut into 1/4 inch wide strips
2 cloves garlic, minced
1/4 cup balsamic vinegar
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground pepper

Directions:

Bring salted water to a rolling boil in a large saucepan. Add the green beans and boil for 5-6 minutes or until crisp-tender. Transfer the green beans to a colander and rinse with cold water. Drain well and pat dry with paper towels. (The green beans can be cooked earlier and refrigerated until ready to use.)

Heat a large skillet over medium heat for 2 minutes. Add the olive oil and swirl the pan to coat the pan evenly. Add the red pepper and garlic and saute for 3 minutes or until the red peppers are crisp-tender. Add the green beans, balsamic vinegar, salt, and pepper and stir-fry until the beans are heated through.
