1 tablespoon extra virgin olive-oil
1 cup chopped yellow onion
5 eggs
8 ounces shredded Monterey Jack cheese
8 ounces cottage cheese
2 tablespoons melted butter
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Directions:

Preheat oven to 400º. Lightly coat a 9-inch quiche or pie pan with a nonstick vegetable spray.

Heat a medium nonstick skillet over medium heat for 1 minute. Add the olive oil and swirl the pan to coat the bottom evenly. Add the onion and saute for 10 minutes, stirring occasionally.

Whisk the eggs in a medium bowl until well blended. Add the sauteed onions and the rest of the ingredients and blend well.

Pour the mixture into the prepared pan. Bake for 15 minutes. Reduce oven temperature to 350º and bake for an additional 30-35 minutes or until set in the center and golden brown on top. Cool at least 10 minutes before serving.
