1/2 cup pineapple juice
2 eggs
1 cup sugar
1 cup flour
1 teaspoon baking powder
Pinch of salt

TOPPING:
Canned sliced pineapple
2 tablespoons butter, melted
Brown sugar

Directions:
Directions:
Preheat oven to 350º.

Beat eggs well. Add sugar gradually, beating until light. Sift together flour, baking powder and salt. Add to the egg mixture with the pineapple juice.

Cover the bottom of a heavy skillet with brown sugar. Add melted butter. Arrange pineapple slices on top of brown sugar and butter.

Bake for 20-25 minutes.Cool slightly; invert on cake plate.

You can also add pecans and maraschino cherries to the pineapples before pouring in the batter.
