5-6 carrots, cooked and mashed (2 cups)
1/4 cup sugar (or less)
2 tablespoons (1/4 stick) butter
1 cup milk
2 teaspoons cinnamon
1/2 cup coconut (optional)
2 eggs
1 teaspoon baking powder
1/2 cup pecans (chopped)

Directions:
Directions:
Preheat oven to 350º. Butter a medium sized casserole dish.

In a food processor, mix everything except nuts and coconut. Add nuts and coconut, and pour mixture into buttered casserole. Cover and bake 40 minutes or until somewhat firm in the center.
