1 cup shortening
1 cup sugar
1 egg
1 tsp vanilla
1 1/4 sifted flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3 cups quick oatmeal
Salt for tops

Directions:
Directions:
Cream shortening and sugar until light and fluffy. Beat in egg and vanilla to mix thoroughly. Sift together flour, salt, baking powder and soda; add to creamed mixture. Stir in rolled oats. Divide dough in quarters and place each part on a sheet of lightly floured waxed paper. Shape in roll 1" in diameter and about 12" long. Wrap in waxed paper and chill several hours or overnight. (It's easier to shape soft dough on waxed paper lightly floured.) Cut in 1/4" slices (dough will be crumbly and cannot be cut thinner). Sprinkle tops lightly with salt. Place about 1" apart on greased baking sheet. Bake in moderate oven, 375º 10 - 12 minutes. Let stand a couple of minutes before removing from baking sheet to rack for cooling. Makes about 12 dozen.
