Crab Stuffed Portabella Mushrooms Recipe

Ingredients: 3 - 4 large portabella mushrooms 1/2 lb crabmeat 1/4 c. minced onion 1/4 c. minced green pepper 1/4 c. minced celery salt and pepper to taste 1 stick butter or margerine ( I use light butter) 1/4 cup. breadcrumbs A little white wine. parmasean cheese

Directions:Clean portabella mushrooms. Saute in skillet top and bottom to take some of the water out of the mushroom. Drain on paper towels.
Saute onion, green pepper, celery salt and pepper in a skillet approximately 15 min. on medium heat Add 2 tbsp. butter and a little white wine.
Add crabmeat to mixture above and saute for 10 min. Add breadcrumbs to mixture and add 3 tbsp. butter. If consistency is too think to spread add a little more butter.
Spread mixture into the mushroom top side down on a cookie sheet or 13 X 9 rectangle pan. Bake for approximately 20 minutes at 350º. |
