3 1/2 c flour, 3 peeled and chopped apples, 2 c granulated sugar, 1 tsp. salt, 1 tsp baking soda, 1 1/2 tsp. cinnamon, 1 -1 2/4 cup vegetable oil, 1/2 c toasted chopped nuts, and 1 tsp. vanilla.

Grease and flour two muffin tins. Throughly combine flour, apples, sugar, salt, soda, nuts, and cinnamon in a large bowl. Stir in oil and vanilla. Batter will be stiff. Divide into muffin tins 2/3 full. Bake at 350 degrees for 30 minutes.

To roast nuts; place chopped nuts on a baking tray and place in a 325 degree oven for 10 minutes.
