1 large package of yellow rice
1/4 c. onion chopped
1/4 c. green pepper chopped
1/4 c. celery
1 lb. shrimp (cleaned and devined)
1/4 c. peas (optional)
add pepper to taste.
1/4 c. chopped green onions save for later.

** can substitute chicken breast cut up in small pieces instead of the shrimp. I have also made it with crab meat.

In a rice cooker, add package of yellow rice with ingredients needed on back of package.
Add 1/4 c. more water.
Add all chopped vegetables and pepper and mix together.
Add meat (shrimp, chicken, etc..
Turn on rice cooker and when the bell rings take top off and stir contents. Put lid back on and let it steam.
When completed, add onion tops and serve.
