2 potatoes (sliced in wedges)
1 zucchini (quartered and cut in 2" pieces)
1 yellow squash (quartered and cut in 2" pieces)
1 head of Broccoli (cut into floweretts)
1 head of cauliflower (cut into floweretts)
1/2 head cabbage (cut in wedges)
1 onion (sliced)
1 green pepper (sliced)
4 stalks of celery (cut into 2" pieces)
4 - 5 tablespoons olive oil
salt and pepper to taste
1/4 tsp. Rosemary
1/4 tsp. Basil
1/4 tsp. Italian Spice

Directions:
Wash and clean all vegetables.
Mix all the vegetables in a 13 X 9 Rectangle Baking Pan.
Pour olive oil and mix thoroughly.
Mix all spice ingredients and spread throughout the vegetables.
Cover with aluminum foil and Bake at 350º for approximately 1 hour. Check to see if fork tender.
If not bake until fork tender then uncover for approximately 15 minutes to brown the vegetables.
