8 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
1 TBLS chopped fresh basil
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
5 slices Swiss cheese
5 slices cheddar cheese
1 tomato thinly sliced
1 (9-inch) refrigerated pie crust

Directions:
Directions:
Combine the eggs, cream, salt, and pepper and basil in a food processor or blender. Layer the spinach, bacon, and Swiss cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes then top with cheddar slices and tomatoes. Continue to cook until the egg mixture is set, about 15 to 20 more minutes. Cut into 8 wedges

I use a 2 quart round casserole to make this, it would also work in a pie plate but it would need to be a very deep pie plate.
