6 c. all-purpose flour
3 Tbsp. plus 1 tsp. pumpkin pie spice
1 tbsp. plus 1 tsp. baking soda
1 tbsp. salt
6 cups granulated sugar
1 can (29 oz.) plain pumpkin
8 eggs
2 c. vegetable oil
1 c. orange juice
2 c. sweetened dried, fresh or frozen cranberries ( I prefer fresh in this, but the others are fine)

Preheat oven to 350º. Grease and flour four 9x5 inch bread pans. I sometimes substitute 3 8 1/2x 4 1/2 pans for 2 of the larger ones. Combine flour, pumpkin pie spice, baking soda and salt in an extra large bowl. Combine sugar, pumpkin, eggs, oil and juice large bowl with wire whisk. Mix until just blended. Add pumpkin mixture to flour mixture; stir until just moistened. Fold in cranberries. Divide into prepared loaf pans.

Bake for 75 to 80 minutes or until a wooden pick comes out clean. The smaller loaves may take 15 minutes less. Cool in pans on wire racks.
