1 cup shortening (half butter)
2 cups brown sugar
2 eggs
1 tsp soda dissolved in 1/4 cup hot water
1 tsp vanilla
4 cups sifted flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup moist shredded coconut (cut up long shreds)

Directions:

Mix shortening, brown sugar and eggs together thoroughly. Stir in soda with water and vanilla. Sift flour, baking powder and salt together and stir in. Mix in coconut. Chill dough 2 hours. Roll into balls the size of walnuts. Place 2" apart on ungreased baking sheet. With fingers flatten each ball into a 1 1/2 x 2 1/2" oblong 1/4" thick. (And we do mean 1/4"!) Press each cookie lengthwise with tines of floured fork in washboard effect. Bake until lightly browned. Temp: 400º; Time: 8 - 10 minutes. Makes 5 dozen.
