½ cup celery, finely chopped
1 large onion, finely chopped
2 T cider vinegar
2 T lemon juice
1 1/2 cup catsup
3 T Worcestershire sauce
3 T brown sugar
1 1/2 tsp. prepared mustard
¾ cup water
1 tsp. salt
4 lbs. beef roast (square cut)

Directions:
Directions:
Mix all ingredients but the beef together in a medium saucepan and simmer for about 5-10 minutes, stirring often.
Cut roast in 2 or 3 pieces and place in roasting pan.
Pour barbeque sauce over beef - cover and bake at 325º for 3 hours.
During last ½ hour, uncover roast and turn frequently; sauce will thicken and meat will brown. Meat should be tender enough to tear apart easily.
Remove from oven and cool enough to handle. Shred meat using 2 forks.
Mix sauce with shredded beef and serve hot with rolls/hamburger buns.
Place in crock pot to keep warm.
