1/2 c. water
1/4 c. butter (no substitutes)
1/2 c. flour
2 eggs

Directions:
In pan bring water and butter to boil. Add flour all at once, stirring until a smooth ball forms. Remove from heat and let stand 5 minutes. Add eggs, one at a time, beating well after each. Beat mixture until smooth and shiny. Put in a plastic bag; seal, cut a 1-in. hole in one corner of the bag. Pipe eight 3-in. logs onto an ungreased baking sheet. Bake at 450 for 10 minutes Reduce to 400 and bake for 15-20 minutes longer or until golden brown. Transfer to rack and immediately cut a slit in each to let steam escape. Cool. Spoon pudding into eclairs.

For the filling I use an instant sugar free pudding mix. All I do is add less milk. For the frosting I also use a pudding, again I use less milk.
