5 lbs. Idaho Russet or Golden Yukon Potatoes
1/3 cups butter
¾ cup Half & Half, regular or fat free
1 can (14 oz) chicken broth
Salt & pepper to taste
½ cup chopped fresh parsley

Directions:
Directions:
Peel and slice potatoes 1/3 inch thick and add water to cover.
Bring to a boil. Cover, reduce heat and simmer for 20 minutes. Drain,
Add butter, half & half and chicken broth. Cook over high heat for 2 minutes.
Mash potatoes and season to taste with salt and fresh cracked pepper,. Place potatoes in a serving bowl and garnish with chopped parsley
