Pecan Crusted Chicken Tenders

16 saltine crackers (finely crushed)
¼ cup pecans (ground)
2 tsp paprika
½ tsp salt
½ tsp pepper
1 egg white
cooking spray
11/2 lb chicken tenders
¼ cup flour

Honey Mustard Sauce

½ c plain nonfat ogurt
¼ c coarse grain mustard
¼ honey
2 tbsp horseradish

Directions:
Directions:
Preheat oven to 425. Stir together crackers and next four ingredients. In another bowl whisk egg white until frothy. Place a wire rack coated with cooking spray in a parchment lined jelly roll pan. Dredge chicken tenders in flour, then egg white then coating. Lightly coat each tender with cooking spray. Arrange on rack. Bake at 425 for about 20 minutes- or until golden brown, turning once after 12 minutes.

Honey Mustard Sauce

Mix all ingredients. Serve immediately or chill for up to 3 days.
