Grilled Balsamic Vegetables over Penne Recipe

1 medium red onion, cut half horizontally
1 medium zucchini, cut lengthwise into 4 strips
3 medium sweet peppers (green, red, and/or yellow)
2 medium tomatoes, cut in half horizontally
1 lb penne
3 Tbsp lemon juice
3 Tbsp balsamic vinegar
1/4 cup olive oil
2 tsp crushed garlic

1. Place all vegetables on grill or barbecue. Grill onion for 25 minutes, turning until charred. Grill zucchini for 15 minutes until charred, turning as necessary. Grill sweet peppers for 15 minutes until charred. Grill tomatoes for 12 to 15 minutes until charred, rotating as necessary. Let vegetables cool for 10 minutes.
2. Remove top, skin and seeds of sweet peppers. Chop all vegetables into medium-diced pieces, keeping juices. Set aside.
3. Meanwhile, cook pasta in boiling water according to package instructions. Drain and place in serving bowl. Add vegetables.
4. Make the dressing: Combine lemon juice, vinegar, oil and garlic. Pour over pasta, and toss.

PER SERVING: 324 cal, 9 g pro, 54 g car, 4 g fiber, 9 g fat (1 g sat fat), 25% cal from fat, 0 mg chol, 9 mg sod.
