2 chicken breasts
2 T. olive oil
1 small onion, thinly sliced
1 c. celery, sliced
1 c. water chestnuts, sliced
1-5 oz. can bamboo shoots
2 c. chicken broth or bouillon
2 T. soy sauce
1/4 C. cold water
salt to taste
1/4 cup toasted almond slivers

Directions:
Directions:
Cook in large skillet or Wok. Preheat oil in heavy frying pan and saute chicken for 2 to 3 minutes. Add onion and celery, cook 5 minutes. Then add water chestnuts, bamboo shoots, chicken broth and soy sauce. Cover and cook 5 minutes more. Add salt to taste. Top with almonds. Serve over brown rice.
