1 to 2 lbs. cooked chicken chunks
1 T soy sauce
1 t salt
1/2 t pepper
1/2 cup paked brown sugar
1/4 cup vinegar
1 can pineapple chunks, undrained
1 medium green pepper, cut into thin strips
2 tomatoes, cut into wedges OR 1 can tomatoes
2 cups instand rice

Directions:
Directions:
Drain pineapple (and canned tomatoes), reserving liquid. Add water to make 2 cups

In a 3 quart baking dish, blend soy sauce, salt, pepper, brown sugar and vinegar.
Add cooked chicken and stir.
Add juice and water. Stir.
Cover and microwave on HIGH until liquid boils.
Add green pepper, tomatoes, and instand rice. Stir.
Cover and microwave on LOW for 5-6 minutes
Makes 4 to 6 servings
