2 1/2 c. sugar
4 c. flour
2 apples, shredded
1 c. pecans
6 eggs, beaten
2 c. oil
1 t. vanilla
4 c. carrots, shredded
4 t. cinnamon
4 t. soda
1 t. salt
1 c. coconut
1 c. raisins

Directions:
Directions:
Sift together in lge. bowl sugar, flour, cinnamon, soda and salt. Add coconut, raisins, carrots, apples and pecans. STIR WELL. Add eggs, oil and vanilla, stirring only until blended not beaten. Spoon into greased muffin tins and bake in preheated 375 degree oven for 20 min.
