3 slices bacon,diced
1 lb boneless skinless chicken breast cubed
1 1/2 teaspoon paprika
1/4 teaspoon black pepper
1 bunch green onion including tops, sliced
1/2 red bell pepper, chopped
1/2 stick celer chopped
1/4 teaspoon thyme
1 1/2 cups uncooked white rice
3 cups chicken broth

Directions:
Fry bacon until crisp,. Add chicken and brown. Add remaining ingredients. Bring to a boil/. Reduce heat to simmer, cover tightly. Simmer 25-30 minutes or until moisture is absorbed and rice is tender. Fluff with fork before serving.
Garnish with fresh parsley and sprinkle of paprika
