2 - 3 lbs of white potatoes
4 eggs
1/4 c of sweet salad cubes, or relish
1 large stalk celery
1/2 small green bell pepper
1/2 small red bell pepper
1 small onion
1 c mayonnaise
1/4 c mustard
dash of vinegar
dash salt, pepper, paprika
Fresh lettuce

Wash, peel and cut raw potatoes. Potatoes should be cut into small squares. Place them in a pot of water, dash of salt, and boil until they are tender.Pour water off, and place potatoes in a dish to cool. They can even go into the refrigerator.In another pot, boil the eggs. Allow them to cool and chop.
Wash celery, peppers, onion and chop.Once the potatoes and eggs are cool, dump in the chopped ingredients. Mix the mayo, mustard, cubes/relish. Taste a small sample to determine if its seasoned well. Sometime, a small dash of vinegar is required to balance the mixture. Once mixed well, place in refrigerator until time to serve. Sprinkle with paprika for garnishing, border with lettuce leaves, as it makes a colorful dish.
