Ingredients: 6 eggs separated 3 tbsp. flour 2 cups sugar (plus 6 tbsp for meringue) 3 tbsp. four 1 tbsp vanilla extract 2 cups milk 7-8 ripe bananas peeled and sliced Box vanilla wafers (about 75)

Directions:In a small bowl, beat eggs yolks till thick and lemon colored. Mix 2 cup of sugar and flour; slowly add to yolks; then add vanilla. In skillet over medium heat, warm milk till almost boiling; stir in yolk mixture. Cook, stirring until thick. Remove from heat. In large casserole dish, layer in order, some of pudding, bananas, vanilla wafers. Repeat till all layers are used. (Optional) Meringue: Beat egg whites with 6 tbps sugar till stiff peaks form. Spread on top of pudding and bake at 450º briefly to brown meringue. Serve. |

Notes: This makes a large dish of pudding and, it you like, you can easily half this recipe. I do not use meringue but some people really enjoy it on desserts. Sometimes, I make a little homemade whipped topping to spread on top...just in case it doesn't already have enough sugar. This has always been my favorite dessert of all times. When I was a child, I never wanted a birthday cake for my birthdays...only a big banana pudding. My mother, Grace Domino, passed away when I was young and so I didn't know till many years later that it was also her favorite dessert. It gives me a good feeling inside to make this for my family.
