1 graham cracker pie crust, 9"
6 egg yolks, beaten lightly
1 cup lime juice
2 14 oz cans sweetened condensed milk
1 tbsp grated lime rind

Beat all together, pour into pie shell and freeze. Remove from freezer 5 minutes before serving and spread with whipped cream.

I cut down on the saturated fat content by using 3 egg equivalent of egg substitute and make my own sweetened evaporated milk by blending 2 cups of sugar, 4 cups of powdered skim milk, 1 cup of hot water and 1 tbsp of melted margarine or oil.
