2 medium Granny Smith apple, chopped
2 tbsp butter
1 medium onion, chopped
5 tsp curry powder
1 tbsp coriander
1/4 cup parsley, chopped
2 lbs ground turkey
1 egg
2/3 cup bread crumbs
1/2 cup milk
Salt & Pepper, to taste

Directions:
Directions:
Saute apples and onions in butter, stirring for 15 minutes. Add curry, coriander and parsley and stir together for 2 minutes more. Combine with the turkey and remaining ingredients and pack into a loaf pan. bake for 1 hour or until top is brown at 350º.

I serve this with hot rice that has peanuts and raisins added and chutney. Good cold in sandwiches.
