1 lb dry curd cottage cheese
2 eggs
4 tbsp flour
3 tbsp sugar
1tsp lemon juice
1 tbsp sour cream
1 1/2 tsp grated lemon rind
1/4 tsp salt
Directions:
Directions:
Put all ingredients in processor bowl and blend together. Scrape into a container and chill. Drop 1/4 cup mixture into flour,and coat. Fry in butter on both sides until brown. Serve with sour cream or preserves or both.

I use an ice cream scoop to measure and drop the mixture into the flour..
