2 Tbsp oil
1 medium onion, diced
2 cloves garlic, minced
3 - 14 ounce cans chicken broth
1 pound boneless, skinless chicken breasts, diced
2 - 15 ounce cans Northern white beans
8 oz chopped green chilis (canned or fresh roasted)
1 tsp oregano
1/2 tsp cumin
1/4 tsp dried cilantro
Salt and pepper for seasoning
1/4 cup Monterey Jack cheese and/or cheddar for garnish, shredded or cubed

Directions:
Directions:
1. Heat oil in large sauce pan over medium heat until hot. Add onions, garlic and chicken. Cook until chicken is done.
2. Stir in remaining ingredients, bring to boil and simmer for 15 minutes, stirring often.
3. Serve into bowls and garnish with cheese.

I usually make this in the crock pot. After first step, put all in crock pot and cook on low if starting in the morning to make for dinner.
