1 c. powdered sugar
1 egg
2 tsp. almond extract (I always add more)
2 1/2 c. flour

Combine, flour surface and rolling pin. Cook at 350º for 7-8 minutes. To make glaze for cookie tops, add powdered sugar, almond extract, and water. Mix by sight-should be runny, but thicker than soup. Add your favorite food coloring to the glaze for color. Use a brush to on cookies, top with sprinkles or sugar while glaze has not set.

These cookies are very addictive! Two very helpful hints--these cookies are best when rolled out thick--I make mine about a 1/4 inch thick, and also cooked so there is NO brown on the bottom. I cook mine for 6 minutes, and then pull them out and let them sit on the hot pan for 1 minute. Friends tell me they taste like bakery cookies.
