1 Tablespoon olive oil
7 large spring onions, cut in 1/2 inch pieces
1 clove garlic, minced
1/4 teaspoon fresh ground black pepper
dash crushed red pepper
1 oz dry sherry
15 large leaves of fresh spinach, chopped (2 cups)
1 pie crust (frozen, roll-out, or homemade)
7 slices Swiss cheese
5 large eggs
1/2 cup skim milk (or whole milk or half and half)
1/8 teaspoon fresh ground nutmeg
1/4 teaspoon paprika
1 oz freshly grated Parmesan or Asiago cheese

1. Preheat oven to 375º.
2. Heat oil in skillet (uncovered, but use skillet w/cover).
3. Add garlic, red pepper, half the black pepper, and the "white" part of spring onions to skillet. Saute for 3 minutes, breaking up the onion pieces.
4. Turn heat to low, add sherry and stir. Add spinach and rest of spring onion, stir, cover. Cook for 10 minutes, stirring often, or until spinach is wilted and heavy.
5. Beat eggs with milk, nutmeg and rest of black pepper.
6. Line prepared pie crust with layer of Swiss cheese slices.
7. Spread spinach / onion mixture evenly over the cheese layer in pie crust.
8. Carefully pour the egg mixture over the spinach / onion layer
9. Dust top with paprika. Bake for 35 min., or until top starts to "pop up"
10. Turn off oven, sprinkle Parmesan / Asiago on top, and place pie back in oven for 5 min.
