8 alcachofas grandes bien tiernas (1 por persona)
8 tazas de agua
1 cubito de caldo de pollo
˝ taza de maicena
˝ taza de leche evaporada
1 taza de queso parmesano rallado
2 cucharadas de aceite de oliva virgen
sal y pimienta del molinillo

Lavar bien las hojas para que suelten toda la tierrita que puedan contener entre las hojas y ponerlas a sancochar en el agua. Una vez cocidas se retiran y se dejan escurrir boca abajo, reservándose el caldo del cocimiento. Este caldo se pasa por un colador forrado con un lienzo.

Se retira la comidita de las hojas, se descarta la pelusa, y los fondos se cortan en 4.

Medir en tazas el caldo colado y aumentarle el agua necesaria hasta obtener 7 tazas.

Licuar los fondos y comidita de las alcachofas, también el cubito con un poco del caldo anterior. Vaciar este licuado y el resto del caldo a una cacerola.

Ya para servir, calentar bien la sopa. Mientras tanto disolver la maicena en la leche y una vez que ha hervido la sopa, bajar a fuego lento y agregarle la maicena disuelta. Cocinar moviendo y por último incorporarle el queso parmesano y el chorrito de aceite de oliva crudo. Mezclar y retirar del fuego. Servir caliente en tazoncitos individuales.
