1 1/2 c sugar 2 T butter
3 T cornstarch 1/2 t grated lemon peel
3 T flour 1/3 c lemon juice
Dash salt 1 9" baked pie crust
1 1/2 c hot water 3 egg whites
3 slightly beaten egg yolks 1 t lemon juice
6 T sugar

Directions:
Directions:
1. Combine sugar, cornstarch, flour and salt in saucepan. Gradually stir in hot water and quickly bring to a boil stirring constantly. Reduce heat and cook 8 more minutes, stirring.
2. Stir a sm amt of hot mixture into egg yolks and then add to hot mixture. Bring to boiling and cook another 4 minutes, stirring constantly. Add butter and lemon peel and slowly stir in lemon juice. Pour into cooled pastry shell and cool to room temperature.
3. Beat egg white with 1 tsp lemon juice to soft peaks. Gradually add 6 T sugar and beat until stiff and sugar has dissolved. Spread meringue over filling and bake at 350º for12 - 15 min. Cool thoroughly before serving.
