1/3 c. oil
1 T. white vinegar
1 t. vanilla
1/4 t. banana extract
2 oz. unsweetened chocolate, melted
1-4 oz. jar banana baby food
1 t. soda
1/2 c. cold water or coffee
CRUMB TOPPING----
3 t. BUTTER
1-4 SERVING INSTANT BANANA PUDDING MIX
1/2 C. FLAKED COCONUT
1/4 C. SUNFLOWER SEEDS (OPTIONAL)

MEASURE FLOUR, SUGAR, AND SALT INTO UNGREASED 10" SKILLET AND MAKE A WELL IN CENTER. aDD OIL, VINEGAR, VANILLA AND BANANA EXTRACT, MELTED CHOCOLATE, BABY FOOD, SODA, WATER OR COFFEE. MIX UNTIL WELL BLENDED, ABOUT 2 MIN., SPREAD IN SKILLET.
*TO PROTECT HANDLE OF SKILLET, IF NOT CAST IRON, COVER WITH FOIL.

TOPPING----CUT BUTTER INTO PUDDING MIX UNTIL RESEMBLES COARSE CRUMBS. STIR IN COCONUT AND SUNFLOWER SEEDS. SPRINKLE OVER CAKE AND BAKE AT 350 DEGREES FOR 30-35 MIN.
