5 cups drained sliced zucchini ( I pan fry in olive oil until crisp, tender)
2 cups chopped fresh or stewed tomatoes
8 ounces shredded cheddar cheese
4 ounces tomato sauce
4 ounces shredded mozzarella cheese
1 small onion chopped finely
1/4 cup grated parmesan cheese

Combined all ingredients in mixing bowl and toss lightly. Spoon into baking dish and bake at 350º for 1 hour.
