Ingredients: 1 small or medium-sized whole fish, gutted - trout works well, or sea bass, or talapier. Discard head if desire. SAUCE: 1/3 c water 13 cloves garlic 1 tsp. brown sugar 1 ginger, peeled and sliced 1 c fresh lemon leaves thinly slice 2 Tbsp. fish sauce 2 Tbsp. oyster sauce 2 Tbsp. thick soy sauce 1/2 green bell pepper, de-seeded and diced 1 fresh red chilli, de-seeded and diced 5-10 leaves of basil 2 Tbsp. olive oil

Directions:Fish should be deep fry very crispy and set aside. May use hole fish or cut into pices to your needs. To be serve in a flat plate. IN a sauce pan. Add the garlic,diced pepper cook until golden brown in medium-low heat. Add all sauce and basil (leave some for garnish) cook it a bet more until sauce are well blend together to form thickness. To serve, plate the fish and pour the sauce over. Garnish with sprigs of fresh basil , slice of chillie and wedges of lime. Serve with steamed rice. ENJOY. |

Notes: This dish is also good with rice, not over rice. It is a side dish..spice your fish can be made so many ways...try it this version..or use Red Curry Paste..................I know having head on doesn't look tastety..but you can alway discard...In Asia peple think, eating the head give you a clear mind...or make you smart.......
