7 c. ground cooked ham
1 lb. veal shoulder, ground
1 lb. beef round, ground
4 c. day-old bread crumbs
1/2 tsp. poultry seasoning
1 tsp. salt
1/2 tsp. pepper
2 eggs, slightly beaten
1/2 c. catsup
4 med. celery stalks, finely chopped (3/4 c.)
1/4 c. chopped parsley
1/2 c. brown sugar, packed
5 canned pineapple slices
5 maraschino cherries

Directions:
Directions:
Combine all ingredients in mixing bowl except brown sugar, pineapple and cherries. Sprinkle brown sugar in bottom of 10-inch angel food cake pan. (Solid bottom) Arrange cherries and pineapple on top of sugar. Press meat mixture around pineapple, pat evenly. Bake at 350ºF. for 1 1/2 hrs. When done, pour off and save drippings. Invert on platter, pineapple side up. Lift off pan and spoon drippings over top.
