1 pork tenderloin
1 Granny Smith apple, peeled and chopped
1 medium Vidalia onion, chopped
1 can whole berry cranberry sauce
1 tbsp Dijon mustard

Directions:
Directions:
Place all of the ingredients in a crock pot and let it cook 7 - 8 hours. the pork should shread easily and the other ingredients should be melted together in a thick chunky sauce.
Serve over prepared stuffing or rice.

This is a great meal if your on the run. I mix the ingredients in the rock pot and refrigerate it the night before I need it. Then, as we are rushing out in the morning I plug in the crock pot and it is ready in the afternoon when we get home.
